These crispy, cheesy mashed potato puffs are golden on the outside, fluffy on the inside, and loaded with savory flavor. A perfect way to use up leftovers or serve as a crowd-pleasing appetizer or side!

- 2 cups cold mashed potatoes
- ½ cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- 2 large eggs
- ¼ cup sour cream
- 2 tbsp chopped green onions
- Salt and pepper to taste
- Cooking spray or butter for greasing
Preheat oven to 400°F (200°C) and lightly grease a muffin tin.
In a bowl, mix mashed potatoes, cheeses, eggs, sour cream, green onions, salt, and pepper.
Spoon mixture into the muffin cups, filling each about 3/4 full.
Bake for 20–25 minutes, until tops are golden and puffed.
Let cool slightly before removing from the tin.
Serve warm with sour cream or dipping sauce.
- Use leftover mashed potatoes—just be sure they’re not too runny.
- Add bacon bits, chives, or jalapeños for variation.
- Mini muffin pans work great for bite-sized versions.
- Store leftovers in the fridge and reheat in the oven or air fryer.
