These crispy, cheesy mashed potato puffs are golden on the outside, fluffy on the inside, and loaded with savory flavor. A perfect way to use up leftovers or serve as a crowd-pleasing appetizer or side!

Ingredients
  

  • 2 cups cold mashed potatoes
  • ½ cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 2 large eggs
  • ¼ cup sour cream
  • 2 tbsp chopped green onions
  • Salt and pepper to taste
  • Cooking spray or butter for greasing

Instructions
 

  • Preheat oven to 400°F (200°C) and lightly grease a muffin tin.
  • In a bowl, mix mashed potatoes, cheeses, eggs, sour cream, green onions, salt, and pepper.
  • Spoon mixture into the muffin cups, filling each about 3/4 full.
  • Bake for 20–25 minutes, until tops are golden and puffed.
  • Let cool slightly before removing from the tin.
  • Serve warm with sour cream or dipping sauce.

Notes

  • Use leftover mashed potatoes—just be sure they’re not too runny.
  • Add bacon bits, chives, or jalapeños for variation.
  • Mini muffin pans work great for bite-sized versions.
  • Store leftovers in the fridge and reheat in the oven or air fryer.
