It’s a favorite that tastes like a million bucks and can be made ahead or frozen for convenience.

Ingredients
  

  • 1 box about 7-8 oz chicken flavor Rice-A-Roni
  • 4 cups cooked chopped chicken (rotisserie chicken works well)
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 4 oz cream cheese softened
  • 1 10.5 oz can cream of chicken soup (unsalted preferred)
  • ¼ tsp garlic powder
  • ½ tsp onion powder
  • 1 sleeve Ritz crackers crushed
  • 5 tablespoons butter melted
  • cups shredded cheddar cheese optional, for topping

Instructions
 

  • Preheat oven to 350°F (175°C), grease a 9×13-inch baking dish.
  • Prepare Rice-A-Roni according to package directions.
  • In a large bowl, combine cooked Rice-A-Roni, chicken, sour cream, cottage cheese, cream cheese, cream of chicken soup, garlic powder, and onion powder; stir well.
  • Spread mixture evenly in the prepared baking dish.
  • In a small bowl, mix crushed Ritz crackers with melted butter; sprinkle evenly on top of the casserole.
  • Optionally, sprinkle shredded cheddar cheese over the cracker topping.
  • Bake uncovered for 30-35 minutes, until bubbly and golden on top.
  • Let rest for 5 minutes before serving.

Notes

  • Use rotisserie chicken for convenience.
  • Cream cheese should be softened for easy mixing.
  • You can add chopped broccoli or other veggies to the mix for added nutrition.
  • This casserole can be made ahead and refrigerated or frozen for later use; add a few extra minutes to baking time if baking from cold.
  • For a crunchy topping, be sure to evenly coat crackers in melted butter.
