- 1 box about 7-8 oz chicken flavor Rice-A-Roni
- 4 cups cooked chopped chicken (rotisserie chicken works well)
- 1 cup sour cream
- 1 cup cottage cheese
- 4 oz cream cheese softened
- 1 10.5 oz can cream of chicken soup (unsalted preferred)
- ¼ tsp garlic powder
- ½ tsp onion powder
- 1 sleeve Ritz crackers crushed
- 5 tablespoons butter melted
- 1½ cups shredded cheddar cheese optional, for topping
Preheat oven to 350°F (175°C), grease a 9×13-inch baking dish.
Prepare Rice-A-Roni according to package directions.
In a large bowl, combine cooked Rice-A-Roni, chicken, sour cream, cottage cheese, cream cheese, cream of chicken soup, garlic powder, and onion powder; stir well.
Spread mixture evenly in the prepared baking dish.
In a small bowl, mix crushed Ritz crackers with melted butter; sprinkle evenly on top of the casserole.
Optionally, sprinkle shredded cheddar cheese over the cracker topping.
Bake uncovered for 30-35 minutes, until bubbly and golden on top.
Let rest for 5 minutes before serving.
