- 1 cup unsalted butter softened
- ⅔ cup powdered sugar plus extra for coating
- 2 ¼ cups all-purpose flour
- ½ teaspoon salt
- 1 teaspoon mint extract
- Green food coloring optional
- ¾ cup mini chocolate chips
Preheat oven to 375°F (190°C) and line baking sheet with parchment paper.
Beat butter and powdered sugar until light and fluffy.
Mix in flour, salt, and mint extract until just combined.
Add green food coloring until desired color is reached; stir in mini chocolate chips.
Scoop tablespoon-sized dough balls and place on baking sheet.
Chill dough balls in fridge for 30 minutes.

Cool on baking sheet for 5 minutes, then roll in powdered sugar while warm.
Let cookies cool completely and roll again in powdered sugar to coat fully.
