No-Bake Strawberry Crunch Cheesecake Recipe

This creamy, dreamy cheesecake features a luscious strawberry filling topped with a sweet and crunchy strawberry crumble. Perfect for warm days when you don’t want to turn on the oven, it’s a crowd-pleaser that’s as beautiful as it is delicious

Ingredients
  

  • 24 Oreo cookies crushed
  • 6 tbsp unsalted butter melted
  • 3 8 oz packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • cups heavy whipping cream whipped to stiff peaks
  • 1 cup strawberry pie filling or puree
  • 1 3 oz box strawberry gelatin
  • cups Golden Oreos crushed
  • 3 tbsp freeze-dried strawberries crushed

Instructions
 

  • Combine crushed Oreos and melted butter; press into the bottom of a springform pan.
  • Beat cream cheese, sugar, and vanilla until smooth; fold in whipped cream.
  • Stir strawberry puree into half of the cheesecake mixture; layer plain and strawberry cheesecake mixtures over crust.
  • In a bowl, mix crushed Golden Oreos, freeze-dried strawberries, and gelatin powder for the crunch topping.
  • Sprinkle crunch mixture evenly over cheesecake.
  • Chill in refrigerator for at least 4 hours before slicing.

Notes

  • For best results, whip cream until stiff peaks form before folding into the cheesecake.
  • Use fresh strawberries for the puree if possible for a brighter flavor.
