- 1 cup all-purpose flour spooned and leveled
- ½ teaspoon ground cinnamon
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1½ cups old-fashioned rolled oats
- ½ cup unsalted butter softened
- ½ cup packed brown sugar
- ¼ cup granulated sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 cup raisins
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
Whisk flour, cinnamon, baking soda, and salt in a bowl; stir in rolled oats and set aside.
Beat butter, brown sugar, and granulated sugar until creamy.
Add egg and vanilla; beat until combined.
Slowly mix in dry ingredients until just combined.
Fold in raisins gently.
Cover dough and chill for at least 30 minutes.
Drop 1.5 tablespoon portions onto baking sheets, flatten slightly.
Bake 10-12 minutes until edges are lightly golden.
Cool on baking sheets 5 minutes then transfer to wire rack to cool completely.
