Ingredients
  

  • 1 cup unsalted butter softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • Pastel candy pieces like pastel M&Ms or pastel chocolate candies, about 24 pieces

Instructions
 

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together butter and sugar until light and fluffy.
  • Beat in egg and vanilla extract until well combined.
  • In a separate bowl, whisk together flour, baking powder, and salt.
  • Gradually add dry ingredients to the wet mixture; mix until the dough just comes together.
  • Scoop dough into 1-1½ inch balls and place on baking sheets.
  • Flatten each dough ball slightly and press one pastel candy into the center of each cookie.
  • Bake for 10-12 minutes or until edges start to turn golden.
  • Let cool on baking sheets 5 minutes before transferring to wire racks to cool completely.
