Ingredients
  

  • 2 ripe bananas mashed
  • ½ cup creamy peanut butter
  • cup honey or maple syrup
  • 2 large eggs
  • ¼ cup milk any kind
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • ½ cup whole wheat flour or more all-purpose
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • Optional: 1/4 cup mini chocolate chips or chopped peanuts

Instructions
 

  • Preheat oven to 350°F (175°C) and line or grease a 12-cup muffin tin.
  • In a bowl, whisk mashed bananas, peanut butter, honey, eggs, milk, and vanilla.
  • In another bowl, mix flours, baking powder, baking soda, and salt.
  • Combine wet and dry ingredients just until mixed—don’t overmix.
  • Fold in chocolate chips or peanuts if using.
  • Divide batter evenly into muffin cups.
  • Bake for 18–22 minutes, until a toothpick comes out clean.
  • Cool in pan for 5 mins, then transfer to a wire rack.

Notes

  • For extra peanut flavor, swirl peanut butter on top before baking.
  • Muffins freeze well for up to 2 months—perfect for meal prep!
  • Use natural peanut butter for less sugar.
  • Great with a smear of jam or extra banana slices.
