- 2-5 habanero peppers seeds removed for less heat if desired
- ½ to 1 cup fresh pineapple chunks
- 1 small red or yellow onion chopped
- 3-4 garlic cloves optional depending on recipe version
- 1 cup white vinegar or apple cider vinegar
- Juice of 1 lime
- ½ cup pineapple juice optional for thinning
- 1-2 teaspoons sugar or brown sugar
- 1 ¼ teaspoons salt
- Optional spices: cumin chili powder, paprika, marjoram, fresh cilantro
Chop habaneros, pineapple, onion, garlic, and cilantro if using.
Simmer pineapple, habanero, onion, and garlic in a saucepan with about 1 cup water for 5-10 minutes until softened.
Add salt, sugar, and optional spices, and simmer briefly to blend flavors.
Transfer mixture to a blender; add vinegar, lime juice, and blend until smooth.
Strain if desired for a silky texture; otherwise, pour straight into clean bottles or jars.
Let cool, then refrigerate.
