Ingredients
  

  • ½ cup butter softened
  • 2 large eggs
  • 3.4 oz pistachio instant pudding mix
  • 17.5 oz sugar cookie mix such as Betty Crocker

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a large mixing bowl, cream softened butter, eggs, and pistachio pudding mix with an electric mixer until smooth.
  • Add sugar cookie mix and mix until a sticky dough forms.
  • Spread dough evenly on a greased 10x15 inch baking sheet.
  • Bake for 10-14 minutes until edges are brown and top just starts browning.
  • Let cool completely before slicing into bars.

Notes

Ensure not to overbake to keep bars soft and chewy. These bars have a lovely green tint and are crowd-pleasers for any occasion.
