- ½ cup butter softened
- 2 large eggs
- 3.4 oz pistachio instant pudding mix
- 17.5 oz sugar cookie mix such as Betty Crocker
Preheat oven to 375°F (190°C).
In a large mixing bowl, cream softened butter, eggs, and pistachio pudding mix with an electric mixer until smooth.
Add sugar cookie mix and mix until a sticky dough forms.
Spread dough evenly on a greased 10x15 inch baking sheet.
Bake for 10-14 minutes until edges are brown and top just starts browning.
Let cool completely before slicing into bars.
Ensure not to overbake to keep bars soft and chewy. These bars have a lovely green tint and are crowd-pleasers for any occasion.
