Ingredients
  

  • 1 cup mashed potatoes cold
  • 1 cup all-purpose flour
  • 2 tbsp butter softened
  • ½ tsp salt
  • ½ tsp baking powder optional

Instructions
 

  • Mix mashed potatoes, flour, butter, salt, and baking powder into a soft dough.
  • Lightly flour the surface and roll dough to about ¼ inch thickness.
  • Cut into triangles or circles using a cutter or knife.
  • Heat a non-stick pan or griddle over medium heat.
  • Cook scones for 3–4 minutes per side until golden brown.
  • Serve warm with butter or fillings of choice.

Notes

  • Best made with leftover mashed potatoes.
  • Do not over-knead the dough to keep scones soft.
  • Add herbs or cheese for a savory twist.
