- Dark chocolate 70% cocoa, chopped – 150g
- Dry red wine Cabernet, Merlot, or Pinot Noir – ½ cup
- Heavy cream – ½ cup plus extra for whipping
- Eggs separated – 3 large
- Granulated sugar – 3 tbsp
- Pinch of sea salt – 1
- Optional garnish: whipped cream chocolate shavings, or berries
In a small saucepan, simmer red wine over medium heat until reduced by half.
Melt chocolate in a heatproof bowl over simmering water; stir in reduced wine and let cool slightly.
Whisk in egg yolks until smooth and glossy.
Beat egg whites with sugar and salt until soft peaks form.
Whip cream until light and fluffy.
Gently fold whipped cream and egg whites into the chocolate mixture.
Spoon into serving glasses and chill for at least 2 hours until set.
Top with whipped cream, chocolate curls, or fresh berries before serving.
Choose a bold, fruity red wine for the best flavor infusion.
For extra richness, drizzle with a touch of reduced wine syrup before serving.
Can be made a day ahead and stored in the fridge until ready to enjoy.
