- 4 cups sweet potatoes peeled and cut into 1-inch cubes
- 2 cups apples cut into 1-inch cubes (any variety, e.g., Granny Smith or Honeycrisp)
- 3 tablespoons olive oil divided
- 2 tablespoons pure maple syrup divided
- 1 teaspoon ground cinnamon
- ½ teaspoon sea salt divided
Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large bowl, toss sweet potatoes with 1 tablespoon olive oil and ¼ teaspoon salt until evenly coated.
Spread sweet potatoes on baking sheet and roast for 20 minutes, stirring halfway through.
While potatoes roast, toss apples with remaining olive oil, maple syrup, cinnamon, and ¼ teaspoon salt in the same bowl.
Remove sweet potatoes from oven, add apple mixture, toss together, and spread evenly.
Roast for an additional 20 minutes, flipping halfway, until potatoes and apples are tender and caramelized.
Remove and serve warm.
Use apples with your preferred sweetness and tartness. Maple syrup caramelizes during roasting to enhance flavor and texture. For softer apples, cut slightly larger cubes.
