- Dark chocolate 70% cocoa, chopped – 150g
- Heavy cream – 1 cup divided
- Eggs separated – 3 large
- Granulated sugar – 3 tbsp
- Sea salt – ¼ tsp
- Caramel sauce – ½ cup
- Crushed chocolate cookies or graham crackers – ½ cup
- Whipped cream – for topping
- Extra caramel drizzle & sea salt flakes – for garnish
Melt chocolate with ½ cup cream over low heat; stir until smooth, then cool slightly.
Beat egg yolks into chocolate mixture until glossy.
In a separate bowl, whip egg whites with sugar until soft peaks form.
Whip remaining cream in another bowl until fluffy.
Gently fold whipped cream and egg whites into chocolate mixture.
Layer parfait glasses with crushed cookies, a spoonful of caramel, and chocolate mousse.
Repeat layers and finish with whipped cream, caramel drizzle, and sea salt flakes.
Chill for at least 1 hour before serving for best texture.
Use homemade or store-bought caramel sauce for convenience.

For a richer flavor, add a splash of coffee or espresso to the chocolate mix.
