- 8 large eggs
- 1 cup milk
- 2 cups fresh spinach chopped
- 1 cup shredded mozzarella cheese
- ½ cup diced onions
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil or butter
Preheat oven to 375°F (190°C) and grease a baking dish.
In a skillet, heat olive oil, sauté onions until soft.
Add chopped spinach, cook until wilted, then remove from heat.
In a bowl, whisk eggs, milk, garlic powder, salt, and pepper.
Stir in spinach mixture and mozzarella cheese.
Pour mixture into the greased baking dish.
Bake for 25–30 minutes or until set and golden on top.
Cool slightly, slice, and serve warm.
- You can add cooked bacon, ham, or mushrooms for extra flavor.
- Store leftovers in the fridge for up to 3 days and reheat before serving.
