- 3 large eggs
- 1 medium potato peeled and grated
- 1 tbsp fresh chives chopped
- 2 tbsp milk
- 1 tbsp butter or olive oil
- Salt to taste
- Black pepper to taste
Peel and grate the potato; squeeze out excess water with a clean towel.
Heat butter/oil in a pan over medium heat.
Add grated potato, season with salt and pepper, and cook until golden and slightly crispy (about 5 minutes).
In a bowl, whisk eggs, milk, salt, and pepper.
Pour egg mixture over potatoes in the pan.
Stir gently until eggs are softly set and creamy.
Sprinkle with chopped chives and serve warm.
