Ingredients
  

  • 3 large eggs
  • 1 medium potato peeled and grated
  • 1 tbsp fresh chives chopped
  • 2 tbsp milk
  • 1 tbsp butter or olive oil
  • Salt to taste
  • Black pepper to taste

Instructions
 

  • Peel and grate the potato; squeeze out excess water with a clean towel.
  • Heat butter/oil in a pan over medium heat.
  • Add grated potato, season with salt and pepper, and cook until golden and slightly crispy (about 5 minutes).
  • In a bowl, whisk eggs, milk, salt, and pepper.
  • Pour egg mixture over potatoes in the pan.
  • Stir gently until eggs are softly set and creamy.
  • Sprinkle with chopped chives and serve warm.

Notes

  • For extra crispiness, spread potatoes thinly in the pan before cooking.
  • Add cheese for a richer flavor.
  • Can substitute sweet potato for a healthier twist.
