Shamrock Shake Pie: Easy, Minty, No-Bake Recipe
This Shamrock Shake Pie is a no-bake, creamy mint dessert that captures the classic flavor and bright green color of the famous Shamrock Shake. With a crunchy graham cracker crust and fluffy mint-pudding filling, it’s a festive treat perfect for St. Patrick’s Day or any time you want a refreshing, easy-to-make dessert. It combines instant vanilla pudding, whipped topping, and mint extract for an indulgent yet simple pie.
Ingredients
- 12 graham crackers crumbled
- 2 tablespoons brown sugar
- ½ cup unsalted butter melted
- 2½ cups cold milk
- 2 teaspoons mint extract
- ¼ teaspoon green food coloring optional for vibrant green
- 2 3.4-ounce packages instant vanilla pudding mix
- 1 8-ounce container whipped topping, thawed
- Whipped cream and maraschino cherries for garnish optional
Instructions
- Combine graham cracker crumbs and brown sugar in a bowl.
- Stir in melted butter until crumbs stick together; press into a 9-inch pie dish forming the crust.
- Freeze crust for 15–20 minutes to firm up.
- In a large bowl, whisk cold milk, mint extract, and green food coloring until mixed.
- Add pudding mix and whisk until thickened, about 2 minutes.
- Let pudding set 5 minutes in the fridge.
- Fold whipped topping gently into the pudding.
- Spoon filling into the crust and smooth the surface.
- Chill pie in the fridge for at least 6 hours or overnight until fully set.
- Before serving, top with whipped cream and maraschino cherries if desired.
Notes
- Use gel food coloring for a more vibrant green if desired.
- Press crust firmly to prevent crumbling when slicing.
- For a chocolate mint twist, use Oreo crust or add chocolate chips in the filling.
- Leave pie at room temperature no longer than 30 minutes to avoid melting.
- Can be made ahead and frozen; thaw overnight in the fridge before serving
