Ingredients
  

  • 1 pound lean ground beef 85-93% lean
  • 1 medium green bell pepper diced
  • 1 medium yellow onion diced
  • 1 cup ketchup
  • 1 tablespoon light brown sugar
  • 3 teaspoons yellow mustard
  • 3 teaspoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 16 oz can refrigerated biscuits (such as Grands, 8 count)
  • 1 cup shredded cheddar cheese
  • Salt and black pepper to taste

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • In a skillet over medium heat, brown ground beef with onion and bell pepper until cooked through and softened; drain excess fat.
  • Stir in ketchup, brown sugar, mustard, Worcestershire sauce, garlic powder, salt, and black pepper; simmer 3-5 minutes.
  • Separate biscuit dough and cut each biscuit into 8 pieces, spreading evenly in the baking dish.
  • Pour the sloppy joe meat mixture over the biscuit pieces and toss gently to coat.
  • Sprinkle half the cheddar cheese over the mixture.
  • Bake uncovered for 25 minutes.
  • Add remaining cheese on top and bake for an additional 10 minutes until biscuits are golden and cooked through.
  • Let rest 5-10 minutes before serving.

Notes

  • Use any semi-hard cheese if cheddar is unavailable.
  • For extra flavor, add a dash of chili powder or smoked paprika.
  • Can be assembled ahead and refrigerated before baking.
  • Substitute ground turkey for a leaner option.
