- 1 lb ground beef
- 1 small onion diced
- 3 cups potatoes peeled and diced
- 1 can 15 oz red kidney beans, drained
- 1 can 15 oz corn, drained
- 1 can 10.5 oz cream of mushroom soup
- ½ cup milk
- 1 tsp garlic powder
- ½ tsp paprika
- Salt and pepper to taste
- 1 ½ cups shredded cheddar cheese
- Fresh parsley for garnish optional
Brown ground beef with diced onion in a skillet; drain excess fat.
Layer half the potatoes in the bottom of a greased slow cooker.
Add half the beef mixture, half the beans, and half the corn.
Repeat layers with remaining potatoes, beef, beans, and corn.
In a bowl, mix soup, milk, garlic powder, paprika, salt, and pepper; pour over layered ingredients.
Cover and cook on low for 5–6 hours or until potatoes are tender.
Sprinkle cheese on top, cover, and let melt for 10–15 minutes.
Garnish with parsley before serving, if desired.
For faster prep, use frozen diced potatoes.
Swap ground beef with turkey or sausage for variation.
Can be prepped ahead and stored in the fridge overnight before cooking.
