- ⅓ cup granulated sugar
- 1 ½ cups all-purpose flour plus 2 tbsp
- ¾ cup unsweetened cocoa powder
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
- 14 tablespoons butter
- 1 ¾ cups packed dark brown sugar
- 1 tablespoon vanilla extract
- ½ teaspoon salt
- 1 large egg plus 1 egg yolk
Preheat oven to 350°F (175°C).
Mix granulated sugar on a plate for rolling. Combine flour, cocoa, baking soda, and baking powder in a bowl.
Melt 10 tbsp butter in microwave, stir in remaining 4 tbsp butter and cool slightly.
Whisk brown sugar, vanilla, salt into the butter until smooth; add egg and yolk, whisk well.
Stir in flour mixture until just combined.
Roll dough into 2 tbsp balls, roll in granulated sugar, place on baking sheets, flatten slightly, sprinkle with sugar.
Bake 12-14 minutes until puffed and cracked. Cool on racks completely before serving.
Do not overbake to keep cookies soft. They keep soft and chewy for days if stored properly.
