- 2 cups cooked chicken breast shredded or chopped
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup lettuce shredded
- ½ cup tomatoes diced
- ½ cup black beans rinsed and drained
- ½ cup corn kernels fresh, canned, or thawed frozen
- ¼ cup red onion thinly sliced
- ¼ cup salsa or southwest dressing
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp smoked paprika
- Salt and pepper to taste
Season chicken with chili powder, cumin, smoked paprika, salt, and pepper.
Layer each tortilla with chicken, cheddar, lettuce, tomatoes, black beans, corn, and onion.
Drizzle salsa or southwest dressing over the fillings.
