- 2 cups cooked pasta
- 2 cups fresh spinach
- 1 cup cooked shredded chicken
- ½ cup cherry tomatoes halved
- ¼ cup red onion thinly sliced
- ¼ cup feta cheese crumbled
- 3 tbsp olive oil
- 1 tbsp lemon juice
- Salt & pepper to taste
Cook the pasta according to package instructions and let it cool.
In a large bowl, combine spinach, chicken, tomatoes, red onion, and pasta.
In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
Pour the dressing over the salad and toss gently to coat everything.
Sprinkle with feta cheese before serving.
- You can use grilled chicken or rotisserie chicken for convenience.
