Ingredients
  

  • 2 cups cooked pasta
  • 2 cups fresh spinach
  • 1 cup cooked shredded chicken
  • ½ cup cherry tomatoes halved
  • ¼ cup red onion thinly sliced
  • ¼ cup feta cheese crumbled
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt & pepper to taste

Instructions
 

  • Cook the pasta according to package instructions and let it cool.
  • In a large bowl, combine spinach, chicken, tomatoes, red onion, and pasta.
  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  • Pour the dressing over the salad and toss gently to coat everything.
  • Sprinkle with feta cheese before serving.

Notes

  • You can use grilled chicken or rotisserie chicken for convenience.
  • Add some toasted nuts for extra crunch.
  • Best served chilled or at room temperature.
