- 1 cup pineapple juice
- ½ cup pineapple diced
- 1 cup sugar
- 2 tablespoons vinegar apple cider or rice vinegar
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 3-4 fresh bird’s eye chilies or 2 tablespoons chili flakes
- 3-4 garlic cloves minced
- 1 teaspoon salt
- 1 tablespoon cornstarch
- 4 tablespoons water for cornstarch slurry
In a food processor, blend pineapple, pineapple juice, garlic, and chilies until smooth.
Pour puree into a pan over medium heat; add sugar, vinegar, lemon juice, lemon zest, and salt.
Bring to a boil then reduce to simmer; cook for 5-7 minutes until sugar dissolves.
Mix cornstarch with water to form slurry; stir into sauce and cook until thickened.
Remove from heat, cool, then transfer to container and refrigerate.
