Ingredients
  

  • 1 cup pineapple juice
  • ½ cup pineapple diced
  • 1 cup sugar
  • 2 tablespoons vinegar apple cider or rice vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 3-4 fresh bird’s eye chilies or 2 tablespoons chili flakes
  • 3-4 garlic cloves minced
  • 1 teaspoon salt
  • 1 tablespoon cornstarch
  • 4 tablespoons water for cornstarch slurry

Instructions
 

  • In a food processor, blend pineapple, pineapple juice, garlic, and chilies until smooth.
  • Pour puree into a pan over medium heat; add sugar, vinegar, lemon juice, lemon zest, and salt.
  • Bring to a boil then reduce to simmer; cook for 5-7 minutes until sugar dissolves.
  • Mix cornstarch with water to form slurry; stir into sauce and cook until thickened.
  • Remove from heat, cool, then transfer to container and refrigerate.

Notes

  • Wear gloves when handling hot chilies to avoid skin irritation.
  • Sauce may intensify in heat after refrigeration.
  • Use fresh or canned pineapple based on availability.
  • Adjust chili quantity to preferred spice level.
  • Great as a dip, glaze, or drizzle for a variety of dishes.
