Main Ingredients:
- 4 slices sourdough bread or whole-grain bread for a heartier option
- 1 ripe avocado mashed
- 1 cup shredded sharp cheddar cheese or mozzarella for milder flavor
- 2 tbsp unsalted butter softened
- 1 small garlic clove minced
- ¼ tsp salt
- ¼ tsp black pepper
- 2 slices tomato optional, for added freshness
- 2 tbsp softened cream cheese optional, for extra creaminess
Optional Add-Ins:
- 2 slices cooked bacon for a smoky twist
- ¼ tsp red pepper flakes for a spicy kick
Prepare the garlic butter: In a small bowl, mix softened butter with minced garlic until combined.
Mash the avocado: In another bowl, mash the avocado with salt and black pepper until smooth. Set aside.
Assemble the sandwiches: Spread garlic butter on one side of each bread slice. On the unbuttered side of two slices, spread a layer of mashed avocado, followed by shredded cheddar cheese (and optional tomato slices, cream cheese, or bacon). Top with the remaining bread slices, buttered side up.
Cook the sandwiches: Heat a large skillet or griddle over medium-low heat. Place sandwiches in the skillet, buttered side down, and cook for 3-4 minutes per side, pressing gently with a spatula, until the bread is golden and the cheese is melted.
Serve: Slice sandwiches in half and serve immediately with a side salad, pickles, or chips.
- Storage: Best enjoyed fresh, but you can store assembled (uncooked) sandwiches wrapped in plastic wrap in the refrigerator for up to 1 day. Cook when ready to serve.
- Substitutions: Use gluten-free bread for a gluten-free version. Swap cheddar for vegan cheese and use plant-based butter for a vegan option. Replace avocado with hummus for a different twist.
- Prevent Soggy Bread: Cook on medium-low heat to ensure the cheese melts without burning the bread. Spread avocado thinly to avoid excess moisture.
- Enhance Flavor: Add a smear of cream cheese for extra richness or sprinkle red pepper flakes for heat.
- Make Ahead: Prepare garlic butter and mashed avocado up to a day in advance and store in the fridge for quicker assembly.
