- 1 box brownie mix plus ingredients on box
- ½ cup strong brewed coffee or espresso cooled
- 1 cup mascarpone cheese softened
- ⅓ cup powdered sugar
- 1 tsp vanilla extract
- 1 egg yolk
- 1 tbsp cocoa powder for dusting
- Optional: 1 tbsp coffee liqueur e.g., Kahlúa
Preheat oven and prepare brownie batter as directed on box.
Mix brewed coffee (and liqueur if using) into brownie batter.
Pour batter into a lined or greased 9x9" baking pan.
In a bowl, beat mascarpone, powdered sugar, vanilla, and egg yolk.
Gently swirl mascarpone mixture over brownie batter using a knife.
Bake for 30–35 mins or until set; do not overbake.
Cool completely, then chill in fridge for at least 1 hour.
Dust with cocoa powder before slicing and serving.
