Add Cheese: Remove the skillet from heat. Gradually sprinkle the grated Pecorino Romano over the pasta, stirring continuously to create a creamy sauce. If the sauce is too thick, add more reserved pasta water a little at a time until the desired consistency is achieved.
Serve: Divide the pasta into bowls and serve immediately.
