  • 1 tablespoon freshly ground black pepper​
  • Salt for pasta water

Instructions
 

  • Boil Water: Bring a large pot of salted water to a boil.​
  • Cook Pasta: Add the pasta and cook until al dente, as per package instructions. Reserve about 1 cup of the pasta cooking water before draining.​
  • Toast Pepper: In a large skillet over medium heat, toast the freshly ground black pepper for about 1-2 minutes until fragrant.​
  • Add Pasta Water: Carefully add 1/2 cup of the reserved pasta water to the skillet with the toasted pepper. Let it simmer for a minute.​
  • Combine Pasta: Add the drained pasta to the skillet, tossing to coat it evenly with the pepper-infused water.​
  • Add Cheese: Remove the skillet from heat. Gradually sprinkle the grated Pecorino Romano over the pasta, stirring continuously to create a creamy sauce. If the sauce is too thick, add more reserved pasta water a little at a time until the desired consistency is achieved.​
  • Serve: Divide the pasta into bowls and serve immediately.
