Layer ¼ cup of shredded mozzarella cheese over the sauce, followed by 6 slices of pepperoni (if using) and any additional toppings. Top with the remaining ¼ cup of mozzarella per sandwich. Place the remaining bread slices on top, buttered side up.
  • Cook the Sandwiches:
  • Heat a non-stick skillet or griddle over medium heat. Carefully place the assembled sandwiches onto the skillet. Cook for 3-5 minutes on each side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted. Adjust the heat as necessary to prevent burning.
