Ingredients
  

  • 2 ripe bananas mashed
  • 1 cup rolled oats
  • ½ cup quick oats
  • ½ cup fresh or frozen blueberries
  • ¼ cup almond butter or peanut butter
  • ¼ cup honey or maple syrup
  • ½ tsp vanilla extract
  • ½ tsp cinnamon
  • ¼ tsp baking powder
  • Pinch of salt

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mash bananas until smooth.
  • Stir in almond butter, honey, and vanilla extract.
  • Add oats, cinnamon, baking powder, and salt; mix well.
  • Gently fold in the blueberries.
  • Scoop dough onto the baking sheet using a spoon or cookie scoop.
  • Flatten slightly with the back of the spoon.
  • Bake for 12–15 minutes until golden and set.
  • Cool on a wire rack before serving.

Notes

  • Use frozen blueberries straight from the freezer to avoid staining.
  • Add a tablespoon of chia or flaxseeds for extra fiber.
  • Store in an airtight container for up to 3 days or freeze for longer storage.
