  • 2 chicken breasts cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 cup cornstarch
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Vegetable oil for frying
  • 2 cups cooked jasmine rice
  • 1 cup coleslaw mix shredded carrots and cabbage
  • 2 green onions sliced
  • ¼ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tbsp honey
  • 1 tsp rice vinegar

Notes

  • Swap chicken for shrimp or tofu for a different protein.
  • Adjust the amount of sriracha to control the spice level.
  • For a lighter version, bake or air-fry the chicken instead of deep-frying.
