- 2 Tbsp olive oil
- 2 large sweet onions sliced
- 4 shallots sliced
- 2 cloves garlic minced
- 1 tsp salt
- ½ tsp black pepper
- 16 oz low-fat cottage cheese
- 1 Tbsp fresh thyme chopped (or 1 tsp dried)
- 2 tsp fresh marjoram chopped (or ½ tsp dried)
- 1 Tbsp fresh chives chopped (plus extra for garnish)
Heat olive oil in a large skillet over medium heat. Add onions, shallots, garlic, salt, and pepper. Sauté and stir occasionally until onions caramelize (about 15–18 minutes). Add a few tablespoons of water if garlic browns too quickly.
Let the onion mixture cool 10 minutes.
Transfer to a food processor and puree until smooth.
Add cottage cheese, thyme, and marjoram; puree again until smooth.
Stir in chopped chives, reserving some for garnish.
Chill dip in the fridge for at least 4 hours or overnight for best flavor.
Serve chilled with your favorite chips or fresh veggies.
- For a tangier taste, substitute half the cottage cheese with sour cream.
- Can be served immediately but improves with chilling overnight.
- Garnish with extra fresh chives for color and flavor.
- Excellent for parties and make-ahead appetizers.
