Ingredients

  • 2 Tbsp olive oil
  • 2 large sweet onions sliced
  • 4 shallots sliced
  • 2 cloves garlic minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 16 oz low-fat cottage cheese
  • 1 Tbsp fresh thyme chopped (or 1 tsp dried)
  • 2 tsp fresh marjoram chopped (or ½ tsp dried)
  • 1 Tbsp fresh chives chopped (plus extra for garnish)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add onions, shallots, garlic, salt, and pepper. Sauté and stir occasionally until onions caramelize (about 15–18 minutes). Add a few tablespoons of water if garlic browns too quickly.
  • Let the onion mixture cool 10 minutes.
  • Transfer to a food processor and puree until smooth.
  • Add cottage cheese, thyme, and marjoram; puree again until smooth.
  • Stir in chopped chives, reserving some for garnish.
  • Chill dip in the fridge for at least 4 hours or overnight for best flavor.
  • Serve chilled with your favorite chips or fresh veggies.

Notes

  • For a tangier taste, substitute half the cottage cheese with sour cream.
  • Can be served immediately but improves with chilling overnight.
  • Garnish with extra fresh chives for color and flavor.
  • Excellent for parties and make-ahead appetizers.
