- 1 cup unsalted butter softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- ¾ teaspoon salt
Preheat oven to 350°F (175°C).
Cream butter and sugar until light and fluffy.
Beat in egg and vanilla.
In a separate bowl, whisk flour, baking powder, and salt.
Gradually mix dry ingredients into wet until dough forms.
Roll dough into balls, flatten slightly, and place on baking sheet 2 inches apart.
Bake 10-12 minutes until edges are lightly golden.
Cool on baking sheet for a few minutes, then transfer to wire rack to cool completely.
Do not overbake to keep cookies soft and chewy. Dough can be chilled for firmer cookies and easier cutting.
