- 1 cup almond butter or any nut/seed butter no sugar added
- ¾ cup allulose or preferred sugar substitute or ½ cup sugar-free maple syrup
- 1 large egg room temperature
- Optional: ½ teaspoon baking soda for thicker cookies
- Optional: ½ cup sugar-free chocolate chips or nuts
Preheat oven to 350°F (180°C). Line baking sheet with parchment paper.
In a bowl, mix almond butter, sugar substitute, and egg until smooth and well combined.
If using, stir baking soda and chocolate chips or nuts into dough.
Scoop dough into balls (about 2 tablespoons each), place on baking sheet 3 inches apart.
Flatten each ball gently with fork or hand.
Bake for 10-12 minutes until edges are just golden but center remains soft.
Remove from oven and cool completely on the baking sheet to set.
- Do not overbake as cookies continue to firm up while cooling.
- Chilling dough for 30-40 minutes helps reduce spreading.
- Store in airtight container at room temperature or in fridge for longer freshness.
- Make eggless by substituting with flax egg or your favorite egg substitute.
