Ingredients
  

  • 4 cups shredded rotisserie chicken
  • 1 6-ounce box stuffing mix
  • 1 ½ cups low-sodium chicken broth
  • 1 10.5-ounce can cream of chicken soup
  • ½ cup sour cream
  • 1 cup frozen mixed vegetables
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 2 tablespoons melted butter

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a bowl, combine stuffing mix and chicken broth, let sit 5 minutes.
  • In another bowl, mix soup, sour cream, black pepper, garlic powder, vegetables, and chicken.
  • Spread the chicken mixture in a greased 9x13-inch baking dish.
  • Top evenly with stuffing mixture, drizzle with melted butter.
  • Bake uncovered 30-35 minutes until hot and golden.
  • Let cool 5 minutes before serving.

Notes

  • Use any combination of vegetables you like.
  • Substitute cream of mushroom soup for a different flavor.
  • Assemble ahead and refrigerate up to one day before baking.
  • Add shredded cheese to the stuffing layer for extra richness.
