- 1 cup cornmeal
- ½ cup all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ¼ tsp cayenne pepper optional
- 1 egg
- ¾ cup buttermilk
- 2 tbsp honey
- ½ cup shredded cheddar cheese
- ¼ cup chopped jalapeños optional
- Oil for frying
In a bowl, whisk cornmeal, flour, baking powder, baking soda, salt, and cayenne.
In another bowl, mix egg, buttermilk, and honey.
Combine wet and dry ingredients to form a thick batter.
Fold in cheese and jalapeños (if using).
Heat oil in a deep pan over medium heat.
Drop spoonfuls of batter into hot oil and fry until golden brown.
Drain on paper towels and serve warm with honey or dip.
- Adjust the honey for more or less sweetness.
- Use muffin tins for baked versions if preferred.
- Serve with spicy mayo or herbed butter for dipping.
