- 4 slices bread sourdough or ciabatta recommended
- ½ cup fresh basil pesto
- ⅓ cup sun-dried tomatoes drained and chopped
- 4 slices cooked bacon crumbled
- 1 cup mozzarella cheese shredded
- 2 tablespoons butter softened
- Salt and pepper to taste
Chop sun-dried tomatoes and crumble cooked bacon; set aside.
Spread basil pesto on one side of each bread slice.
Layer mozzarella cheese, sun-dried tomatoes, and crumbled bacon on two slices.
Top with remaining slices, pesto side down.
Heat skillet over medium heat and melt 1 tablespoon butter.
Grill sandwich until golden brown, about 3-4 minutes per side, flipping carefully and adding remaining butter.
Remove from heat, slice in half, and serve hot.
